If you don’t know who Charles Wiley is- now is your chance to taste his incredible cuisine. His culinary career pans more than 40 years and he has been named one of “The Ten Best New Chefs in America” by Food & Wine, “One of the Best Hotel Chefs of America” by the James Beard Foundation, and Chef Honoree of the Scottsdale Hall of Fame.
His signature cooking style takes advantage of local, seasonal ingredients, and time-honored flavor marriages. Dishes tend to be light, yet intensely flavored and robust. Chef Wiley joined the preopening team at Mountain Shadows, meticulously designing the kitchen and dining areas. As the resort’s executive chef, he oversees all culinary operations.
After several stints as executive chef and director of food and beverage for luxurious resorts around the U.S., Wiley opened Sanctuary Camelback Mountain Resort & Spa in 2001 as executive chef and director of food and beverage, where he was instrumental in the concept, menu design, and cuisine for all dining outlets, including elements restaurant. He then launched the signature restaurant ZuZu inside Hotel Valley Ho when the hotel reopened in 2005. He continues to oversee all food and beverage operations for Westroc Hospitality, which developed and manages Sanctuary, Hotel Valley Ho and Mountain Shadows.
