On my quest to eat (mostly) dairy free I’m posting a quick recipe you can make and keep on hand when hunger strikes (or if your toddler is having a complete mental breakdown and you cannot find 2 seconds to make breakfast) The best part is you literally throw everything in a bowl and you’re done. My 1 tip: coat your hands with PAM baking spray before rolling the mixture into balls! Play around with different ingredients, James prefers butterscotch chips and pumpkin pie spice so get creative!
- 1 cup steel cut oats
- 1/2 cup mini chocolate chips
- 1 cup peanut butter
- 1/2 cup honey
- 1 tablespoon vanilla bean paste (or vanilla!)
- handful of walnuts
- handful of unsweetened coconut
- sprinkle of apple pie spice
Mix everything together and roll into balls. Refrigerate and snack all week.
